One Pot Vegan Tofu Scramble

If you’re looking for a quick breakfast or something to prepare ahead of time, this one pot vegan tofu scramble is a healthy and high protein way to start the day. It is easily modifiable with any of your favorite veggies or favorite vegan protein.

Ingredients

  • 1 block tofu

  • 3 tbsp soy sauce

  • 1 tsp turmeric

  • 3 tbsp nutritional yeast

  • Pepper to taste

  • Half an onion, sliced

  • Handful of mushrooms, sliced

  • 1/2 block I AM NUT OK vegan cheese

  • Handful of spinach

  • Handful of black olives

Optional

  • Package of tortillas

  • Vegan sausage

Directions

  1. Chop mushrooms, onions and toss in a large pan with a little oil over medium heat

  2. Let the mushrooms and onions cook for 5 minutes

  3. Drain the tofu (but do not press) and use your hands to crumble the tofu into the pot

  4. Add all remaining ingredients to the pan and continue to cook over medium heat until the mushrooms have browned, onions are soft, and spinach is cooked.

  5. Warm the wraps in a pan before serving warm mix in them. Pair with vegan sausages.

  6. Enjoy!
