Vegan Loaded Sweet Potato Fries

Sweet potatoes are a healthier alternative, but loading them with veggies, cheese, and mayo can make them extra decadent! Plus, the beautiful orange fries are a great pop of color on your table.

Ingredients

  • 2 large sweet potatoes

  • 1/4 cup oil

  • Pepper to taste

  • 2 tbsp salt

  • 1 medium onion

  • 10 mushrooms

  • 1/2 block I AM NUT OK Cheese (We used 1/4 block PeppAhhh and 1/4 block C’e Dairy?)

  • Jalapenos (as many as you can handle)

  • Vegan mayo to top

  • Sprinkling of chives

  • Parme-Sans Cheese to top

Directions

  • Stick your I AM NUT OK vegan cheese in the freezer as this will make it easier to grate later

  • Slice onion and place in pan with oil

  • Cook on low heat until caramelized (this takes a while so start early)

  • Preheat oven to 200C

  • Peel and slice sweet potatoes into fries

  • Mix oil, pepper, and salt in a large bowl

  • Place sweet potatoes into oil mixture and coat evenly

  • Spread out sweet potatoes on a baking sheet and bake for 20 minutes or until tender, crispy and brown, rotating occasionally

  • By now, the onions should be browning nicely so slice your mushrooms and add them in with the onions and cook until tender and juicy

  • Assembly time! Place warm sweet potato fries in an oven friendly bowl and top with mushrooms, onions, jalapenos, and grate I AM NUT OK vegan cheese over the top. Sprinkle with I AM NUT OK Parme-Sans vegan cheese and place the entire dish in the oven until the cheese is hot, no more than 3-4 minutes

  • Remove the fries from the oven

  • Dollop vegan mayo on top generously

  • Chop fresh chives and sprinkle over the top

  • Serve immediately and enjoy!
