Elote with Oh, Grate!
Easy recipe for some delicious grilled Mexican street corn!
Ingredients
Corn on the cob
Bluffalo (finely grated)
BeSaucy Chipotle mayo
Oh, Grate
Lime
Coriander (finely chopped)
METHOD
Heat a large pot of boiling water and add your corn, cook for 5 minutes until golden yellow in colour.
Remove the corn from the water and allow to dry on some paper towels.
Fire up your BBQ or heat a large frying pan on the stove.
Add the corn and char on all sides, rotating every few minutes.
Combine equal parts of grated buffalo and mayo and stir until well combined.
Using a spoon or pastry brush, slather your corn with the mayo/bluffalo mixture.
Sprinkle Oh, Grate all over the cob to coat evenly.
Squeeze over some lime juice and sprinkle coriander and you can even add a splash of hot sauce or dusting of Tajin or chilli salt for an extra kick.
